As early as the mid-20th century, scientists began sounding alarms about the impact of processed foods and refined carbohydrates on the brain, metabolism, and body composition. These warnings were often drowned out by industry-funded messaging, advertising the “health benefits” of cereal, margarine, and low-fat everything. Meanwhile, the food pyramid placed grains at the base — a decision that would fuel epidemics for decades.
Against the Grain offers a way to turn back the clock and refuel. Follow the steps to modify your diet, and stay healthy, or in deed, get your good health back.
RECIPES
This Zingy, mouth-watering Classic Rotisserie Chicken with Herbs will keep you nourished, and smiling. The herbs infuse the chicken and add aromatic charm to this flavoursome Dish.
Ingredients:
1 whole oven ready chicken (4/5lbs)
A couple of tbsp olive oil
A handful of fresh rosemary
A handful of fresh thyme
A couple of cloves of garlic (minced)
Splash of lemon juice
Salt, and pepper to taste
Method
Mix the oil, rosemary, thyme, and minced garlic, lemon juice, and seasoning in a bowl.
Rub the mixture all over the chicken, including under the skin.
Tie the legs of the chicken together, or pin with the skewer spikes as you fit it.
Roast in the preheated oven for one hour, and thirty minutes at 180oC.
Leave to stand for ten minutes before calving.

We live in boxes, wake to alarms, move little, eat often. We are fed from vending machines, cardboard packages, microwave trays. Our food is coloured, sweetened, puffed, powdered, and packaged. It promises energy but delivers fatigue. It promises health but delivers illness. Something is deeply wrong, and most of us feel it — even if we can’t name it.
